Avocado Thursday: Avocado sandwiches

For this week’s edition of Avocado Thursday, we’re going to talk about sandwiches. Although I am not a huge fan of sandwiches, I find that any sandwich is better (and more edible) with an avocado. Here are some of my favorites: 

The B.A.L.T–an avocado twist on the BLT. It’s a bacon (soy, of course), avocado, lettuce and tomato sandwich. On toasted bread with a little mayo or spicy hummus–yum! 

Avocado with cheese–a grilled cheese sandwich with some slices of avocado melted in with the cheese. There is no need to add ketchup to this grilled cheese sandwich (yes, I eat grilled cheese with ketchup. I know it’s kind of gross but it’s a childhood habit that I just cannot break). 

Avocado burger–take any type of burger you like–veggie, black bean, turkey, beef–and top it with some diced avocados and tomatoes. Any burger is better with some avocado. 

And then there’s this sandwich:

  • 1 ripe avocado
  • 1 tablespoon fresh orange juice
  • 1/2 to 1 teaspoon green Tabasco sauce
  • 1/4 teaspoon ground coriander
  • 1/2 teaspoon coarse salt and pepper
  • 1/2 cup yellow grape tomatoes, halved
  • 1 small cucumber, peeled, halved lengthwise, seeded, and cut into 1/2-inch dice
  • 1 large or 2 small radishes, halved and thinly sliced
  • 2 whole-wheat pitas (6 inches each), top third cut off


    1. Halve and pit avocado. With a spoon, scoop out avocado flesh, cut into chunks, and transfer to a medium bowl. Add orange juice, Tabasco sauce, and coriander; season with salt and pepper. Mix gently to combine.
    2. Add tomatoes, cucumber, and radish. Combine, and divide mixture between 2 pitas. Serve immediately.

    I have not yet tried it but I plan to this weekend. I particularly like the use of a radish, because I’ve always wanted to feel like a Fraggle.
